Mango Salsa

Some meals just call for salsa and a meal made with fish calls for mango salsa. Luckily, mangoes are easy to come by here in Quito as are the rest of the ingredients you need to make this simple dish. Cumin, salt, cilantro, lemon, red onion, peppers, garlic, and mango

Mango Salsa

2 ripe mangoes, diced
1/2 half red onion, finely diced
1 red pepper, finely diced
1-2 hot peppers, minced
2-4 cloves garlic, minced
1/4 to 1/2 cup cilantro, minced

1 tsp cumin
1 tsp ground coriander
juice of one lemon or one lime
salt to taste

Take all of these ingredients and mix them together in a bowl. Let the salsa sit for 20 minutes or so while you prepare the rest of your meal. Best eaten the same day but is pretty good the second day. We’ve never had any last longer than that! Great with fish tacos or just with tortilla chips.

  1. Funny, just had some last night that a friend made. She added edamame! Surprising how much I enjoyed the addition. You keep posting gorgeous travel and luscious meals on purpose, don’t you? Just to get me down there!

      I think I might add the chochos that I can get here… they’re not unlike edamame come to think of it. Talk about fusion cuisine, hey?
